Bakers, for cinnamon roll bites, I typically package this way:


  1. In a pink or white boutique box lined with greaseproof paper. See packaging video.
  2. Add an optional wrap/sticker.
  3. Pipe or spoon frosting into a condiment cup.
  4. Sell for $6-$8.
  5. Note: you can also package in a gusset bag. See this past video for an example. For this version, I sell for $5.


Cinnamon Roll Bites

Ingredients

    • 3 TBSP active dry yeast

    • 1 cup granulated sugar
    • 3 cups lukewarm water
    • 10-12 cups all purpose flour
    • 1 cup olive oil or 1 cup melted butter (see note)

    • 1 TBSP salt

    • 1/2 cup soft butter, melted for brushing

    • 1 cup granulated sugar
    • 1/2 cup brown sugar
    • 1-2 TBSP cinnamon

    • 1/2 cup melted butter

    • 6 TBSP evaporated milk
    • 1 tsp vanilla
    • 1 lb (3.5-4 cups) powdered sugar

      1. Olive Oil Note: This cinnamon roll recipe is an old family favorite and includes olive oil in the dough. Olive oil creates an incredibly soft, fluffy roll that stays tender for days. If preferred, you may substitute it with an equal amount of melted butter. Simply allow the butter to cool slightly before adding it to your dough mixture.

      1. In a large mixing bowl, dissolve yeast, 1/2 cup granulated sugar, and 3 cups lukewarm water.

      2. To the same mixing bowl, add olive oil, salt, and remaining 1/2 cup granulated sugar. Mix well.

      3. Add 10–12 cups of flour, one cup at a time, mixing well after each addition. Stop adding flour once the dough becomes stiff and no longer sticky. Knead the dough using the dough hook on medium speed for about 10 minutes.

      4. Place kneaded dough into large greased bowl and cover with cloth.
      5. Let rise for approximately 1-3 hours or until doubled.

      1. Punch down dough and divide into sections. Roll each section into ropes about ¾–1 inch thick.
      2. Cut into bite-sized pieces, about the size of a pretzel bite. Place on parchment-lined baking sheets.
      3. Cover and let rise for another 20–30 minutes.

      1. Preheat oven to 350°F.
      2. Bake bites for 12–15 minutes, or until golden brown.
      3. While bites are baking, mix together 1/2 cup brown sugar, 1 cup granulated sugar, and 1 TBSP cinnamon. Set aside.

      4. Once bites are finished baking, brush bites with melted butter. Complete this step while the bites are still warm.

      5. Immediately roll in sugar, brown sugar, and cinnamon mixture.

      1. Using an electric mixer, mix together 1/2 cup melted butter, 6 TBSP evaporated milk, 1 tsp vanilla, and 1 lb powdered sugar.

      2. Consistency should be thin but not runny.
      3. Portion into condiment cups for dipping.
