Shamrock Shake Fudge

Shamrock Shake fudge is amazing and tastes just like a Shamrock Shake!

Ingredients

- 3 1/4 cups sugar (650 g)
- 1 cup butter (226 g)
- ⅔ cup melted vanilla ice cream (165 g)
- 8 oz marshmallow fluff (226 g)
- 14 oz white chocolate (400 g)
¼ tsp peppermint extract
- ½ tsp clear vanilla
- Pinch of salt
- Tiny drop leaf-green gel color (optional)

3 oz. milk or dark chocolate, melted for drizzling
- Mini chocolate chips for garnish
Directions

In a heavy saucepan combine sugar, butter, and melted ice cream.
Cook over medium, stirring often, to 234°F (soft ball stage). Use a candy thermometer and do not exceed 234°F to prevent crumbly texture.
- Remove from heat immediately.

Add marshmallow fluff, white chocolate, clear vanilla, peppermint extract, green food coloring (if using), and a pinch of salt to saucepan.
- Stir in until silky.

- Lightly mist cavities with baking spray.
Fill warm fudge to the top of each mold cavity.
Tap pan firmly on counter to level. Use the back of a greased spoon to spread evenly.

Melt 3 oz of chocolate in the microwave in 30-second increments, stirring between each round until smooth.
Transfer to a piping bag and snip a small tip.
Lightly drizzle over each fudge bar, then sprinkle with mini chocolate chips.
