Mini Banana Nut Loaves

Ingredients

    • 1/2 cup salted butter, softened

    • 2-3 ripe bananas

    • 2 eggs, slightly beaten

    • 2/3 cup sugar

    • 1 tsp. baking powder

    • ¼ tsp baking soda

    • 1 ¾ cups flour

    • ½ tsp vanilla

    • 1 ½ cups chopped walnuts (optional)

      1. Preheat oven to 350°F. Grease and line a standard loaf pan with parchment paper for easy removal.
      2. In a medium bowl, whisk together the flour, sugar, baking powder, and baking soda. Set aside.
      3. In a separate bowl, mash the ripe bananas until mostly smooth with just a few small lumps remaining.
      4. Add the softened butter to the mashed bananas and stir until combined.

      5. Mix in the slightly beaten eggs until fully incorporated.
      6. Gradually add the dry ingredients to the wet ingredients, gently folding until just combined. Do not overmix.
      7. If using nuts (such as chopped walnuts or pecans), fold them in at this stage.

      8. Pour 100-110 grams of batter into each cavity of the silicone loaf mold

      1. Bake for 20-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

      2. Allow the mini loaves to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
